Making brownies is super easy and fun. These ones are made with cream cheese and definitely add a a bit of saltiness, creamy dimension and nice visual contrast. Don’t you just love the swirls on top?

If you are a cheesecake lover, these Cheesecake Brownies are the ones to bake for you. They have a fresher taste because of the cream cheese and lemon but they are still sweet and gooey.

You can skip the swirl part on top and just simply make two layers if you don’t want to do it. But be careful not to over bake the brownies because they will come out dry and you want them to be soft and moist.

The only difficult part of making brownies is letting them cool down completely, so they have enough time to set right. If you try to cut them warm, they will just fall apart and you will make a big mess. Also they taste intensely sweet while warm.

Cheesecake Brownies

Servings 1 baking tray size 36x21,5 cm

Ingredients

Brownie batter:

  • 140 grams of flour
  • 0,5 tea spoon of salt
  • 1,5 table spoon of cocoa powder
  • 280 grams of dark or baking chocolate
  • 160 grams of butter
  • 100 grams of granulated sugar
  • 100 grams of granulated sugar
  • 100 grams of granulated sugar

Cream cheese batter:

  • 345 grams of cream cheese
  • 1 egg
  • 60 grams of sugar
  • 2 table spoons of lemon juice
  • Zest of half a lemon
  • Zest of half a lemon

Instructions

  • Put chocolate and butter in a pot and melt it on low heat. Stir and make sure it doesn’t start to boil.
    When it is melted, add in sugar and check that the mixture is not too hot (wait and cool it down if it is), because now you need to whisk in eggs, one by one.
  • Put flour, salt and cocoa powder in a bowl and stir then add it to the chocolate mixture while whisking.
    Leave just a few spoons of batter for topping but pour the rest of it in a baking tray with baking paper and spread it a little. I used baking tray size 36x21,5 cm.
  • Now prepare the cheesecake batter by simply adding all the ingredients (cream cheese, egg, little vanilla aroma, sugar, lemon juice and zest) in a bowl and mix until smooth. Put in on top of the brownie base and spread with a spoon equally.
    Add remained brownie batter on top with a spoon and draw swirl lines from it with a toothpick.
  • Bake it in a preheated oven on 180 degrees Celsius for about 30 - 35 minutes. Take it out of the oven and leave to cool down completely, then slice and serve.
