The Cashew Salad Dressing is creamy in texture, nutty, slightly sweet and sour in taste. You can spice up with these different salads as desired.
It is quick and easy to prepare.
If you reduce the amount of water a little, you can also use it as a dipping sauce or other. I imagine that it goes well with sliced vegetables for a snack or poured over some crispy roasted salmon.
You can also make a cashew salad dressing from whole cashew nuts that you use instead of the butter, but soak them in water for a few hours or overnight beforehand to make them easier to mix.
Cashew Salad Dressing
Servings 2 portions
- 3 tablespoons of cashew butter
- 3 tablespoons of lemon juice
- 3 sprigs of fresh parsley
- ½ teaspoons of salt
- Black pepper
- 1 dl of water
- Place the parsley, cashew butter and lemon juice in a narrow tall bowl, add water, salt and pepper to taste and blend into a smooth texture with a stick mixer.Serve immediately over salad of your choice or refrigerate for later.
