Stuffed peppers with tomato sauce are one of the tastier dishes for me but it takes a bit of time aand skill to make it good, so I went and tried to get a similar flavor with less work. This yummy soup is the result.

What is especially attractive about this easy stuffed peppers soup recipe is that you just put all the ingredients in a pot and cook, and during this time you can prepare a side dish (I added boiled potatoes in pieces) or get some other work done.

When cooking, just be careful not to add too much water, as you want it to thicken on its own by cooking. The dish is even more delicious if it will rest for a while.

Stuffed peppers soup

Ingredients

  • 500 grams of mixed (pork, beef) ground meat
  • 3 garlic cloves
  • 1 onion
  • 3 peppers (each can be a different color)
  • 2 cans of whole tomatoes (800 grams)
  • 100 grams of rice
  • 1 teaspoon of paprika powder
  • 1 tablespoon of brown sugar
  • Olive oil
  • 1 bay leaf
  • A pinch of thyme
  • A pinch of marjoram
  • Salt
  • Black pepper

Instructions

  • Sear chopped onion in olive oil for a few minutes. In the meantime, you can blend the content of canned tomatoes until smooth. Add brown sugar.
  • Then add ground meat to the pot and stir and cook until it changes color. Remove seeds from peppers and slice them up and add it to the meat. Also add spices (salt, paprika, bay leaf, ground pepper, marjoram, thyme).
  • Then pour over the tomatoes, add more water, somewhere half a liter, cover with a lid and cook for 35 minutes. Stir occasionally.
  • Add rice to the dish and cook for an additional 15 minutes until it is done.
    During cooking time, pour in water if it gets too thick, but let the dish thicken nicely on its own.
  • Finally taste and add more spices if needed, otherwise you can serve the dish with a piece of bread, boiled potatoes or anything else you like.
