This is another easy pasta recipe that is done in less than 15 minutes. This pasta is super fresh. I like having cherry tomatoes even during winter, because they are packed of flavor and fresh parsley I actually keep in my freezer.

Spaghetti with parsley pesto is super easy to make, just cook pasta and blend the sauce ingredients in the meantime. You can adjust the sauce quantities to your liking, for instance use more or less garlic and onion and definitely taste before stirring everything together.

Parsley Spaghetti

Cook Time 15 minutes
Servings 3 portions

Ingredients

  • 250 grams of spaghetti
  • 35 grams of parsley
  • 1 garlic clove
  • Little red onion (a bit larger piece than garlic)
  • 90 grams of cherry tomatoes
  • 1 tea spoon of salt
  • Black pepper
  • 4 table spoons of olive oil
  • 60 grams of Grana Padano cheese

Topping:

  • Grated Grana Padano cheese
  • Olive oil

Instructions

  • Cook spaghetti in hot salty water and then drain it but save some starchy water.
  • While spaghetti is cooking, just simply blend other ingredients (parsley, garlic, onion, cherry tomatoes, olive oil, salt and pepper) to smooth pesto. (adjust the quantities to taste)
  • Add parsley pesto to cooked spaghetti and stir and add little starchy water to make it moist. Leave covered up for a minute so that pesto ingredients cook from the heat of hot spaghetti and start to smell good. Then stir in grated Grana Padano cheese.
  • Serve straight away, topped with some additional grated cheese and drizzle with olive oil.
