Oven-baked minced meat in the shape of a loaf, with spices and carrots.

The quantities are a bit bigger because I prepared the loaf for one gathering, but we can easily halve the amount of meat and the rest according to your own taste. I even made this meatloaf the day before, put it in the fridge and baked it the next day, which means the flavors were really mixing and it was very tasty and soft.

Usually I put some additional vegetables in the baking dish from which I later make a gravy.

When I remove the meat loaf, I put a little water in the baking pan and heat it on the stove so that everything that sticks to the baking tray separates nicely, then I mix everything and thicken if necessary to make a gravy.

This is really the best part of roasting meat in the oven. 😉

Meatloaf

Ingredients

  • 1 kg of minced mixed meat
  • 2 onions
  • 180 grams of red carrots (4 carrots)
  • 1 teaspoon of celery leaves spice
  • Parsley
  • 3 cloves of garlic
  • 1 tablespoon butter
  • 150 grams of breadcrumbs
  • 1 egg
  • Olive oil
  • 1 teaspoon of paprika powder
  • Salt
  • Black pepper
  • 1 dl of red wine

Instructions

  • Put one onion and 1 carrot aside for the pan but peel and chop the rest of them. In a saucepan with olive oil, cook it until soften, stirring for about 10 minutes. Let it cool down.
  • Now you can combine all other ingredients (except for the wine) in big bowl (chop garlic and parsley, melt butter) and season (salt, black pepper) according to taste. Add roasted vegetables and mix well. Then put the mixture on a baking sheet in baking pan and shape it into a loaf.
  • When satisfied, add 2 deciliters of liquid (1 dl of water and 1 dl of wine or just water) to the baking pan and add remained carrots and onions, then cover with aluminum foil and bake for 45 minutes at 200 degrees Celsius. After that, remove the aluminum foil and bake for another 30 minutes, until the meat is browned nicely. Allow the meat loaf to rest a little, then cut it warm and serve.
  • From leftover veggies in the baking dish, you can optionally make a sauce or just serve it with meat.
