Chicken meat with honey and lemon is very easy to prepare and the dish is cooked quickly. In between you can also prepare a side dish. I just cooked rice and peas in one pot. It also goes great with polenta, couscous, pasta, mashed potatoes…

You can prepare the meat in the form of steaks or baked pieces of meat from the oven if you prefer and then just add the meat to the sauce.

Replace the water with a soup base, if you have one, as this will make the dish even tastier, but make sure it is not too salty.

The one thing you need to be careful about is to cook the meat on low heat, slowly and stop when it is done and still moist, so it will be soft and not overcooked or dry.

Honey Lemon Chicken

Cook Time 25 minutes
Servings 3 portions

Ingredients

  • 500 grams of chicken meat (breast)
  • 1 tablespoon of coconut oil
  • Salt
  • Black pepper

Sauce:

  • 3 tablespoons of soy sauce
  • 5 tablespoons of honey (more or less to taste)
  • 3 tablespoons of lemon juice
  • Lemon zest (half a lemon)
  • 1 tablespoon of (corn) starch
  • 2 dl of water

Sprinkle:

  • Spring onion
  • Sesame seeds
  • Grated lemon zest

Instructions

  • Cut the chicken into larger pieces and salt and pepper very lightly. Sear it for a few minutes in coconut oil, just enough to color it nicely and cook until done.
    The meat is then placed on a plate and covered with aluminum foil.
  • Put all the ingredients for the sauce in a large cup and mix so that there are no lumps and then pour into the pan where you cooked the meat. Boil for at least 10 minutes until it thickens nicely. Stir several times in between.
  • Then put the meat in the sauce, stir and cook for another minute to warm up the pieces and serve hot with a side dish (rice, pasta, mashed potatoes ).
