These yummy cookies are super easy to make and perfect to do with your kids if they like molding things with their hands.

Make sure the cookies are about the same size so they will bake equally and keep an eye on them while baking just to make sure they will not born, because cookies are baked fast. You can just open the oven, take a look and keep on baking.

Cookies are sweet, nutty and crumbly.

You can use any other nuts you want, I make this recipe with walnuts a lot too. But I usually use whole nuts that I ground myself simply in kitchen blender.

You can change things up by not roll it in icing sugar at the end, but dip cookie tips in some melted chocolate.

Hazelnut Croissant Cookies

Servings 40 cookies

Ingredients

  • 150 grams of ground hazelnuts
  • 300 grams of flour (half smooth, half sharp)
  • 230 grams of butter (softened)
  • 80 grams of icing sugar
  • 1 egg
  • 1 table spoon of rum
  • vanilla extract
  • More icing sugar for dusting the cookies

Instructions

  • To a big bowl add the flours, ground hazelnuts, sugar and stir. Then add in softened butter, egg, rum and few drops of vanilla extract, then knead with your hands until ingredients come together in a big ball of dough.
  • Then take about half a table spoon of the dough in your hands and roll and shape it into a moon shape cookie. Place on a baking paper on a baking tray and continue doing the cookies until you run out of cookie dough.
  • Bake at 180 degrees Celsius for 12 minutes.
    Leave to cool down then dust or roll them in icing sugar and serve.
