This is an easy, delicious and healthy sweet treat you can have for breakfast with no bad thoughts. These Carrot Balls are made with fresh carrots and sweetened with dry dates. You simply put the ingredients in a kitchen blender and blend until sticky dough, then you shape the balls with your hands, roll it in some coconut flour and you are done. Super easy, right?

Carrot Balls

Cook Time 10 minutes
Servings 11 balls


  • 150 grams of carrots
  • 50 grams of coconut flour
  • 100 grams of dry dates
  • 50 grams of ground walnuts
  • Pinch of salt
  • Half a tea spoon of cinnamon
  • Pinch of nutmeg
  • Pinch of cloves
  • 1 tablespoon of lemon juice
  • Vanilla aroma
  • Additional coconut flour for rolling in (about 30 grams)


  • Peel and finely grate the carrots.
  • Place dates in a blender and blend as much as you can. Then add in the carrots and the seasoning (salt, cinnamon, nutmeg, cloves, lemon juice and vanilla), ground walnuts and blend again. Finally add coconut flour and blend once more. If it isn’t blending just stir it with a spoon.
  • Shape larger balls with your hands, roll it in coconut flour and serve. You can chill in in the refrigerator for a couple of hours.
