Super easy, less than 15 minutes pasta recipe that is just so delicious and healthy. All you need to do is to cook your pasta, blend the ingredients to make a creamy sauce, stir everything together and enjoy. Ok, you also need to roast the pine nuts and grate some cheese, but that’s not hard right?

You can adjust the sauce ingredients to your own taste. But don’t forget to save some of the water you cooked pasta in, to add it later and make the dish moist and nicely combined.

Avocado Wide Spelt Noodles

Cook Time 15 minutes
Servings 3 portions

Ingredients

  • 250 grams of wide spelt noodles
  • 2 avocados
  • 4 table spoons of lemon juice
  • 4 table spoons of olive oil
  • 30 grams of spinach leaves
  • 1 tea spoon of salt
  • Pinch of white pepper

Toppings:

  • Grana Padano cheese
  • 50 grams of pine nuts

Instructions

  • Cook pasta in salty hot water by package instructions. Then drain it but save some of the water pasta was cooked in.
  • While pasta is cooking just roast pine nuts in a pan until lightly brown.
  • Make sauce by blending these ingredients until smooth, creamy paste: avocado, lemon juice, olive oil, spinach leaves, salt, white pepper. (adjust the quantities to taste)
  • Then stir the sauce with pasta, add some cooked water to make it moist and serve straight away. Sprinkle grated cheese on top and add roasted pine nuts.
