We’re in Halloween spirit this week so I baked these easy and delicious Jack-O-Lantern Cookies with my boys. Well, I baked, Liam made a few cookies too, but Leon just played with the dough and made a mess.
Cookies are filled half chocolate spread, half marmalade and are supposed to be scary. Are they? The boys loved them and me too. They are very easy to make, the boys used their sharp (and cleaned) play dough utilities to carve their lantern shapes but I simply used a knife.
They came out very big with the right amount of crunch, but the ones with marmalade filling did soften up in time which is fine with me.
I almost always use a bread spatula to help transfer cookies as they can be fragile or sticky, so I suggest you do the same.
And also use a big mold, so you will have room to carve the shapes you want. It can be a bit tricky if you have small circles.
