Roughly grate carrots and peel, then crush garlic.Add spaghetti to salty boiling water and cook until done, then drain but save some starchy water.
In this time cook crushed garlic and grated carrot on olive oil for a minute or two while stirring. Then add in about 2 dl of water from pasta and cook for 2 minutes, until the carrot is soft. Add in cooking cream and season with salt, turmeric, black pepper and cook for a minute more.
Add in chopped chives and then stir in cooked pasta. Add more pasta water if it gets too thick. Serve immediately. ⠀Sprinkle with grated hard cheese on top if you want and enjoy.
