Dice the onion, peel and dice carrots and celery root then cook on olive oil in a big pot for a couple of minutes so it starts to smell good. Then add sliced smoked ribs and seasoning (little salt, black pepper, bay leaf). Also add beans, tomato puree and diced potatoes.
Rinse barley under water and add it to the pot. Pour in hot water to submerge all ingredients and cook on low heat for at least 40 minutes, so everything is cooked, stew thickens and flavors develop. Occasionally stir while cooking and add more water if necessary.
Then taste and season more with salt and black pepper if needed. Stir in apple vinegar and cook for a few minutes more. Sprinkle with fresh parsley and serve hot.
