300 grams of grounded nuts (half hazelnut, half almonds)

Instructions
Whisk the egg whites in a big bowl to a hard snow and add the icing sugar, vanilla aroma and whisk some more until you get hard snow that holds its shape. Take 3 table-spoons of to a bowl and place it in the refrigerator.
Then add to the remained snow other ingredients like cinnamon, nutmeg, cloves and nuts and stir it to combined but sticky dough. Take a piece of plastic kitchen foil and place the dough on it and cover it with another piece of plastic foil and then roll out the dough. You can take the foil off and replace it again if needed during this process and roll forward to 5 millimeters thick.
Then take the dough with the foil and place it on a straight surface like a kitchen board and put it into refrigerator for at least 1 hour so it hardens.
Then place it on kitchen counter and remove the foil on top and cut out star-shaped cookies with your cookie cutter and place the cookies on a baking try that you already placed baking paper on.
Remained cookie dough just press together, place the plastic foil on top and roll out again, remove the foil and continue making cookies like this until you run out of the dough.
Cover each cookie with whipped snow (meringue) that you left in the refrigerator with a spoon or you can pipe it. Then bake the cookies for 16 minutes on 130 degrees Celsius and then set your oven to 130 degrees and bake for 15 minutes more. Leave to cool down and then move.
