Cook pasta in salty hot water by package instructions. Then drain it but save some of the water pasta was cooked in.
While pasta is cooking just roast pine nuts in a pan until lightly brown.
Make sauce by blending these ingredients until smooth, creamy paste: avocado, lemon juice, olive oil, spinach leaves, salt, white pepper. (adjust the quantities to taste)
Then stir the sauce with pasta, add some cooked water to make it moist and serve straight away. Sprinkle grated cheese on top and add roasted pine nuts.
