Chop the onion, peel and cut the carrot into small cubes. Put the coconut oil in the pan and cook onions and carrots for about 5 minutes, until it is lightly browned. Season it with salt and stir.
Cut zucchini into small cubes and add to the pan and cook for 5 minutes. Then add coconut flour and mix until is starting to smell good. Pour over with water and cook for about 5 minutes to soften the vegetables.
Add the couscous, cook for a while and leave for a few minutes to soak up the moisture. Add chopped chives, mix and season to taste. If you think the couscous is too dry, stir in some hot water. Serve as a side dish or main course.
