Couscous with vegetables and coconut flour.
This is a simple side dish or a great main course, with a bit of an exotic taste. 🙂
Who says we should only use coconut flour in desserts? I do not.
I’ve already put coconut flour in soup, salad, and this time it spiced up yummy couscous with vegetables. 🙂
Easy to prepare and very delicious.
Coconut couscous
Servings 3 portions
Ingredients
- half an onion
- half a green zucchini
- 1 carrot
- bunch of chives
- 1 tablespoon of coconut oil
- 2 tablespoons coconut flour
- 1 deciliter of couscous
- 4 deciliters of water
Instructions
- Chop the onion, peel and cut the carrot into small cubes. Put the coconut oil in the pan and cook onions and carrots for about 5 minutes, until it is lightly browned. Season it with salt and stir.
- Cut zucchini into small cubes and add to the pan and cook for 5 minutes. Then add coconut flour and mix until is starting to smell good. Pour over with water and cook for about 5 minutes to soften the vegetables.
- Add the couscous, cook for a while and leave for a few minutes to soak up the moisture. Add chopped chives, mix and season to taste. If you think the couscous is too dry, stir in some hot water. Serve as a side dish or main course.
