Asian egg noodles with vegetables and shrimp tails.

I love Asian flavors and because I live in an area of Slovenia where I don’t have a Chinese restaurant around the corner, I cook it myself. One of my favorite recipes is egg noodles with soy sauce, to which I add a different combination of vegetables and meat.

I also don’t have a wok and in the past I always cooked in an ordinary frying pan, which was a problem for me, because I was afraid that I will destroy the frying pan with the high heat that is typical for preparing dishes from a wok. However, since I have this great stew container from Riess, I am no longer afraid of it as it tolerates high temperatures perfectly and is a great wok substitute in my opinion. : D And it’s big enough that the ingredients don’t fall out. 🙂

Asian shrimp noodles

Cook Time 16 minutes
Servings 3 portions

Ingredients

  • 2 carrots
  • Half a green zucchini
  • 1 smaller onion
  • Half of yellow pepper
  • Half of red pepper
  • 3 tablespoons soy sauce
  • Half a teaspoon of corn starch
  • 125 grams of egg noodles
  • 225 grams of shrimp tails
  • Coriander
  • Sesame oil
  • Salt
  • Chili powder

Instructions

  • Slice vegetables as you like (carrots, zucchini, peppers, onions), I just cut them into strips. Put sesame oil in the pan and then quickly cook in it onions, peppers and carrots over high heat, season with salt so that vegetables are soft quicker and stir it so that they do not get burn. It should take about 5 minutes for the vegetables to turn brown.
  • During this time also cook your egg pasta according to the instructions on the packaging and then drained it.
  • Then add sliced zucchini and shrimp tails to the pan and cook and stir for 5 minutes until the vegetables are no longer raw and shrimp tails are cooked. Add sesame oil as needed.
  • Season with chili to taste, add coriander and soy sauce.
    Starch is stirred to 1 deciliter of water and then added to the dish and cooked long enough to allow it to thicken slightly.
    Finally, stir in cooked pasta and serve it hot.
